๐ฅฌ Getting Them Ready
Pick the smaller leaves โ Look for collards with small to medium leaves. They are more tender and cook faster. The huge, thick ones are tougher and take much longer.
Soak them in salty water โ Collards hold a lot of dirt and grit. Fill your sink with cold water, add a big handful of salt, and soak the leaves for 10โ15 minutes. Swish them around, then rinse well. Do this twice if the water looks dirty.
Strip the stems the easy way โ Hold the leaf by the bottom of the stem with one hand. Use your other hand to grip the leaf and pull it firmly upward. The leafy part comes right off in one clean piece.
Don’t throw away the stems โ The thick stems are tough to eat whole, but you can chop them very fine and cook them along with the leaves. They add a nice crunch and flavor.
Dry them well after washing โ Wet leaves will splash hot oil everywhere when they hit the pan. Shake them dry or spin them in a salad spinner before cooking.

Use a little sugar to cut the bitterness โ Collards can have a bitter edge. Add a pinch of sugar or a drizzle of honey while they cook. It balances the bitterness without making them sweet.
Add a tiny pinch of baking soda โ If your collards are taking forever to get tender, stir in a very small pinch of baking soda (about โ teaspoon). It helps break down the toughness faster. Be carefulโtoo much will make them mushy and change the flavor.
Cook them low and slow โ The best collards are cooked gently for a long time. Let them simmer on low heat for 45 minutes to an hour. They get silky and soak up all the broth flavors.
Or cook them fast and hot โ If you’re in a hurry, chop the leaves very thin, heat a skillet with oil and garlic, and toss the greens in. Stir-fry them for 5โ7 minutes until they wilt. They stay bright green and slightly chewy.
